Over three years in the making, this Méthode Traditionnelle Sparkling Cuvée is the very pinnacle of our vineyard. Created following time-honoured methods, it starts with a blend of our best Chardonnay, Pinot Noir and Pinot Meunier fruit from the Oceanside Vineyard.
The Primary fermentation captures fresh, bright, slightly tart flavours and is followed by a secondary bottle ferment in the traditional method. It is then rested sur-lie for an extended period to create a galaxy of delicate flavours.
A step above our Sparkling White, the 2017 Cuvée Vintage presents a creamy mouth feel, with a luscious baked green apple pie and brioche flavours mixed with subtle hints of apricot spritz and buttery lime. A rich tapestry of taste creates a matured, cultured wine with an extraordinary bead on the palate.
We find that this vintage is best paired with a few dozen fresh oysters, sharp blue cheese, cured meats, or fresh fruits. It will eclipse any other sparkling white we have currently available.
Grown & produced at our Ocean facing vineyard, this natural amphitheatre is perfect for growing colder climate grapes and is reflected here perfectly.
